Cinco de Mayo is next week AND it will be Taco Tuesday AND Teacher Appreciation Day! Seriously so much to celebrate this May 5th! And what would Cinco de Mayo or Taco Tuesday be without Margaritas?!?
Many of us are guilty of going to a mexican restaurant and ordering one (or two or three) of those giant fishbowl flavored margaritas. I know I sure am! While I will still enjoy a fishbowl margarita for special occasions, I try to keep my alcoholic drinks somewhat figure friendly. Typically my drink of choice is red wine, but when the weather starts getting nicer, and sun is shining longer, I am all about the ‘umbrella drinks’. One day I noticed I had some POM juice and extra limes and decided to pick up some tequila and make margaritas and they turned out DELICIOUS! And they were ‘hubby approved’!
I am usually not one to care about calories or sugar when I am on vacation or enjoying a weekend with some drinks. But when it’s so simple to make a classic drink ‘skinnier’ I can’t resist! A typical margarita contains 2 ounces of tequila (about 200 calories) and 1 ounce of triple sec as the ‘sweetener’ (about 100 calories and 11 grams of sugar), plus the flavor added to make a margarita strawberry, peach, or mango flavored is typically just more sugar or syrup. So we are talking hundreds of unneeded sugar and calories. And seriously who has just one margarita?!?
My recipe uses POM juice or any pomegranate juice (which only has about 20 calories and 4 grams of sugar per ounce), club soda, fresh orange and lime juice. This recipe is for a pitcher, so it will make about 4 margaritas. Enjoy your Cinco de Mayo! I love any holiday that gives me a reason to eat chips and salsa and drink margaritas.
- 1 cup silver tequila
- 1 cup pomegranate juice
- juice of 2 limes
- 2 tbsp fresh orange juice
- 18-20 ice cubes
- 1/2 club soda
- salt or sugar for the rim
- Blend the tequila, pomegranate juice, lime juice, orange juice, and ice in a blender.
- Stir in the club soda.
- Dip the wet rim of drinking glasses into salt or sugar.
- Garnish with a fresh lime or orange slice.
