Making energy bites for the week has become a part of my Sunday meal prep. Half of my Sunday afternoon is spent in the kitchen, but it’s so worth it when I have breakfast, lunch, and snacks prepped for the entire week. My husband and I typically both eat energy bites rather than a granola bar as an afternoon snack. And my husband even sneaks one or two for dessert after dinner every now and then! I am always experimenting with new recipes and using dessert recipes for inspiration when making energy bites and these white chocolate cranberry protein bites have become one of my favorite! I eat one energy bite a day usually right before I leave work. It fills me up so when I get home I don’t think about food and can easily begin a workout.
If you have ever looked at the ingredients for traditional protein bars many of them are filled with ingredients you can’t pronounce and can be SO expensive! This is why I started making my own from real ingredients.
I got the idea for this recipe around Thanksgiving time when I made white chocolate pecan cranberry cookies. They were so delicious I wanted to turn them into a healthy energy bite, so i could eat them everyday without all the guilt. I know it’s summer time and when you think cranberry, you might think about Fall, but I have been making these bites for the past few weeks and just had to share the recipe with you!

- 3/4 cup dry oats
- 1/2 cup vanilla protein powder*
- 1/2 cup almond butter
- 1/3 cup honey
- 1/3 cup white chocolate chips
- 1/3 cup dried cranberries
- 1 tbsp chia seeds (optional)
- 1/2-1 tbsp almond milk
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Combine all ingredients in a large bowl. Roll about one heaping tablespoon into a ball. Should make about 8-10 energy bites. Store in the refrigerator for up to a week.
