Hello! Happy Wednesday. During the school year I actually dread Wednesdays because I have lost my beginning of the week energy and it’s not quite close enough to the weekend. But I am so excited today to share my first ‘What I ate Wednesday’ #WIAW.
What I ate Wednesday is hosted by Peas and Crayons and it’s a way for healthy lifestyle bloggers to connect and share their food diary for one day of the week. I am so guilty of getting in a food rut, where I literally eat almost the same thing every day. I thought that maybe sharing what I ate with you all would help me switch things up. I also always find it so interesting reading about what other health and fitness bloggers eat throughout the day and I get lots of meal ideas. I also realized I am not the only person that eats almonds like three times a day!!!
This post was actually what I ate yesterday, peas and crayons says it doesn’t have to be literally what you ate on Wednesday, it’s more about sharing your meals any given day of the week.
I started my morning out with a 6:30 a.m. mile walk with the dog then a 3 mile run followed by some lower body and core work. It was way too hot even that early for a run, I was dripping in sweat! And side note, for some reason I don’t like eating right away when I get up to workout, but I know most people need some sort of fuel, I just drink a glass of water and am good to go. So after my workout I had breakfast at about 8:00 and it was one egg and one egg white scramble with a green smoothie. The recipe for this smoothie is here: Tropical Green Smoothie (I didn’t add the yogurt to it though). I only drank half the smoothie and saved the rest in the fridge for later. Oh and I had my morning coffee, seriously cannot function without! I drink black coffee, sorry so boring.
After sitting watching my morning TV, getting some things done around the house, and studying for a class I’m taking around 11:00 I drank the rest of my smoothie and had 1/4 cup of almonds. I also added some dried apricots and bananas and a few cashews to make it like a trail mix. I am a HUGE believer in eating small meals/snacks about every 3 to 4 hours. I feel this helps keep me full and I never really go hungry for long periods of time.
Then I had to go out and run some errands, Target, post office, library. I just finished Gone Girl (I know I’m like a year behind, but I really only read during the summer when I have time because I’m off work) so I picked up Dangerous Girls by Abigail Haas. When I got home it was time for lunch! I had leftover grilled chicken from Monday night I put on a salad with veggies I had prepped Monday as well. My Greek Grilled chicken recipe can be found here: Grilled Greek Chicken Kabobs. And I topped the salad with homemade tzatziki instead of dressing because it tastes soooo good with the chicken. It was also super hot out yesterday so I made sure I filled up and drank my entire water bottle to stay hydrated (and full).
After lunch I went to lay out by the pool for a bit. I know, I know life of a teacher is so hard, but seriously September-June it’s insane. We 100% deserve all our time off. When I got back I wanted to try out a few new blog updates and read through my favorite blogs latest posts, while doing this I ate a Chobani Simply 100 peach greek yogurt. They are naturally sweetened with Stevia, so have a lot less sugar than other flavored yogurts and are still packed with protein. I am obsessed with these!
After chilling on the computer and doing a few more things around the house I started to prep dinner. Any other husbands or wives out there have to sometimes make two different meals, one for you and one for your spouse? Tonight was one of those nights. I have been trying to eat more fish because of its health benefits, but my husband is not a fan. So we agreed on fish nights he would eat steak (which I’m not the biggest fan of). So it was fish tacos and steak fajitas on the menu. I grilled the steak and fish, I used frozen cod. I sautéed some veggies, red pepper, red onion, jalapeño, and garlic and added black beans. And for my fish tacos I made a slaw and homemade guac (OMG I could have eaten it all, love guac!) Then I stuffed corn and flour tortillas for us and served them with Late of July blue corn chips (these are so addicting, I definitely ate more chips and guac than pictured when I was cooking, lol)
Usually I ALWAYS have a dessert, but I was honestly too full. So I had a piece of my new Trident Swedish Fish gum. We also had company stopping over and I didn’t want to have onion breath, hehe.

2. ALWAYS! I love veggies and my boyfriend does not, so I am always making two things.
3. I love snacking throughout the day! It’s my favorite thing to do.

August 6, 2015 at 3:33 am (8 years ago)I love grilled veggies and grilled chicken! Grilled chicken, especially is so versatile to eat by itself, toss with pasta, serve in a brown rice bowl, etc. The spices can make it so good!
And I prefer 3 medium size meals with a small afternoon and after-dinner snack usually 🙂
