It has been awhile since I’ve shared with you a weeks worth of workouts and healthy meal ideas. So since today is Monday and Megan is hosting the Week in Review link up, what better time to talk about two of my favorite things! This past week I tried a few new recipes and since I just finished a round of the 21 Day Fix Extreme I tried to write up some of my own workouts incorporating a few of my favorite moves from the program with other exercises to switch it up. Healthy Meal Ideas
Sunday: For Breakfast I had a smoothie bowl with almond milk, spinach, Vanilla Shakeology, half a frozen banana, and some strawberries blended then topped with almonds and Purely Elizabeth Granola. Too pretty not to share. For dinner we had Grilled Jerk Chicken Sandwiches. I used this rub recipe and marinated about three pounds of chicken in some EVOO, 1/3 cup soy sauce, and fresh lime juice. Served with some grilled pineapple on a whole wheat bun with some veggies, perfect summer meal! And the leftovers were used for my lunch salads for the week, put into my stainless steel food containers I just got to make it easy to grab and go.
Monday: Skinny Orange Chicken from Add a Pinch, this was the first time I’ve made this recipe and my husband and I both really enjoyed it! It was super quick and I served it with brown rice and veggies.
Tuesday: Taco Tuesday of course. I made this Quinoa Enchilada Bake from Cooking Classy, but skipped the black beans and corn and added about four boneless skinless chicken breasts in the crockpot. Topped with cheese, lettuce, avocado, and hot sauce with a few Late of July Sweet Potato Tortilla Chips. Sorry no pictures, I devoured this right away because it’s one of our favorite meals!
Wednesday: Brinner. I made this Zucchini, Ham, and Cheese Quinoa Cups recipe into a Frittata, minus the quinoa. Nothing wrong with the cups, I just like an easy frittata on a busy weeknight. I also used canadian bacon. This has become a new sneaky way for me to sneak veggies into a meal, you don’t even taste the zucchini!
Thursday: Kung Pao Chicken Meatballs from Fit Foodie Finds. I love making meatballs, because I can make extra and throw them in the freezer for a busy weeknight. These were delicious and I even added a few hot peppers to the meatballs because we like spicy food. Served these with brown rice and veggies, mostly leftover from Monday.
Friday: Chipotle. I had an 8th grade field trip and we got back late, so I picked up Chipotle on the way home, I even had a BOGO coupon, SCORE! I had brown rice, double chicken, fajita veggies, black beans, mild, a little bit of cheese, lettuce, and guac on the side. I ate half and had the other half the next day for lunch.
Saturday: I made my mom’s Veggie Lasagna Recipe, I’ll have to ask her permission before I share 😉 I used broccoli, zucchini, carrots, mushrooms, and onions as the veggies. You can really use any lasagna recipe and any veggies. Just sauté the veggies a bit in some EVOO before layering.
Sunday: Yoga Fix Extreme from the 21 Day Fix Extreme Program
Monday: 30 minutes of Plyo and Strength Training exercises followed by a 10 minute AB session
Tuesday: 40 minutes of upper body exercises
Wednesday: 40 minutes of interval training on the treadmill
Thursday: Lower Fix Extreme from the 21 Day Fix Extreme Program and went to a BodyPump class after work because I LOVE it so much!
Friday: Tabata Bodyweight workout. I didn’t do a traditional Tabata, I did 10 exercises, 50 seconds work, 10 seconds rest, for 3 rounds
Saturday: My Total Body Cardio and Strength Training Circuit Workout
And in case you missed this one on my Instagram, I usually always keep a Quest Bar in my bag when I’m on the go. Since I recently became a Quest Ambassador I literally have a pantry full of Quest Bars and can’t get enough of them. Chocolate Chip Cookie Dough is obviously my favorite along with the rest of America as it was recently voted America’s FAVORITE Protein Bar! Way to go Quest!
