How do the weekends go by so fast? We were so fortunate to have beautiful weather all weekend long. Friday night my husband and I wanted to celebrate our two year wedding anniversary so we went out to dinner at The Chart House in Annapolis. While the traffic getting there was ridiculous, it was definitely worth it for a delicious meal and scenic view of the water. We had a few glasses of wine, shared a caricature and cheese plate for an appetizer, Tom got the prime rib and I had rockfish with lobster and crab on top. I love getting seafood out because that’s something I wouldn’t normally make on my own. When we got home I had made chocolate and vanilla cupcakes for dessert. I topped the chocolate cupcakes with an eggless cookie dough frosting and the vanilla with buttercream frosting. We had cupcakes at our wedding, so I thought it would be a nice dessert to have with a glass of champagne. All the cupcake and frosting recipes were from Sally’s Baking Addiction, all her recipes always turn out great and I love how she includes several baking tips in each post.
Thanks to Meghan for hosting the Week in Review link-up. Today I wanted to list the other Summer meals we had this past week. Since I’m off in the Summer it’s nice having the extra time to spend in the kitchen making recipes I’ve been wanting to try, but too busy during the school year.
Greek Yogurt Chicken Salad. I cooked the chicken in the crockpot with a little broth then shredded it using my stand mixer. I added celery, red onion, grape halves, and pumpkin seeds and made the dressing using greek yogurt, lemon juice, tarragon, and s&p. For dinner Monday I wrapped the chicken salad in some bibb lettuce leaves. We also ate this for lunches throughout the week. I enjoy having chicken salad in the summer when it’s too hot for a warm meal.
I made these Paleo Bang Bang Shrimp Tacos from Lauren. Everything, the tortillas, slaw, shrimp sauce were all homemade. It was such a delicious combination, but definitely a very time consuming recipe. I could of used a margarita after all that time in the kitchen 😉
We had a Frittata for dinner on Wednesday, I didn’t really follow a recipe, just added shredded zucchini, mushrooms, and onion to a cast iron skillet to cook for a few minutes and then added the eggs and some goat cheese. It was a good combination, but not my favorite. I usually make frittata’s on Wednesday just using whatever veggies I have leftover in the fridge.
P.F. Changs Lettuce Wraps from Kristen. I LOVED this recipe, I had leftover bibb lettuce leaves and have really been wanting to make this copy cat P.F. Changs recipe. It was so good, my husband ate his in tortilla wraps, but I used the lettuce leaves and was fully satisfied. The homemade sauce was super simple and tasty, I don’t like using store bought sauces so I always try to find recipes where I can make my own. Oh and I used lean turkey instead of ground chicken, I just prefer the turkey taste over chicken.
Friday and Saturday
Friday we ate dinner out and Saturday we attended a BBQ at a friends house. They smoked chicken, ribs, ham, brisket, and pork. It was definitely a weekend full of delicious food!
By Sunday all I wanted was a giant salad for dinner after a few indulgences over the weekend. I grilled chicken using this Italian Kabob Recipe from Rachel and made a homemade greek yogurt caesar dressing from Ali. It was the perfect summer meal, we actually got to eat it on our porch because it wasn’t too hot out. I know in a matter of time it will be far too humid to enjoy eating outside.
