Yay for Wednesday! I can’t believe it’s already July and the 4th has come and gone. I hope you had a wonderful holiday weekend. We had fun celebrating the marriage of two of our good friends Phil and Catherine and also got to spend some time by the pool while the sun was out. But the last few days have been pretty overcast and rainy here, doesn’t really feel like summer.
Most of you that me well, know how much I love talking about and looking at food. So today I’m sharing everything I ate one day last week. I definitely find myself eating significantly less over the summer. Probably because I’m not working and tend to sip on water and Bai’s instead of eating while lounging at the pool or on the porch 😉
After walking the dog and a morning run, no weight lifting this day because I was resting my muscles, I had a protein shake with unsweetened almond milk, spinach, vanilla Shakeology, strawberries, pineapple, and ice. This is my favorite combination for my daily shake. And here’s an old pic because I totally forgot to take one.
After catching up on my morning social media and drinking a cup of coffee I went over to the gym for a yoga class. I have been enjoying doing a 3 mile run and yoga on my active recovery days to help stretch and relieve some soreness in my muscles. When I got back form yoga I did a few things for my upcoming 21 Day Fix Challenge group and soon was hungry again. I made some oatmeal with water and added in 2 tablespoons of this D’s Naturals S’mores protein fluff I found on my last trip to Vitamin Shoppe. I’m obsessed with protein nut butters. I have like 5 jars of them and need to finish some before I buy anymore, every flavor always sounds so good though!

Then I went to the pool for a few hours to read/nap and relax #teachersummer. When I got back I cooled off with a Bai Pomegranate Juice and warmed up some leftovers from dinner the other night. I had a baked sweet potato (which I only actually ate half of) with home made turkey sloppy joe on top and a side salad. I kind of followed this recipe from Jill for the sloppy joe’s but I added some hot sauce and cayenne pepper because we like things spicy. This sloppy joe recipe is so easy and delicious and I love eating ground turkey in a stuffed sweet potato as opposed to a bun, extra nutrients and lower carbs, win win!
After doing a few more things on the computer and cleaning up around the house before I knew it, it was time to start making dinner. The previous night I had marinated some jerk chicken in a home made jerk seasoning, soy sauce, lime juice, and olive oil. So I grilled up the chicken and made Julie’s coconut cauliflower rice and cinnamon sweet plantains. Once everything was cooked I put it all together in a bowl and topped with some lettuce and avocado slices. It was yummyyyyy, so many good flavors! If you haven’t tried cauliflower rice yet I highly suggest it, great way to sneak in your veggies and you’ll barely taste the difference. I buy the cauliflower crumbles from Target so I don’t need to worry about making my own.
Since I finished dinner pretty late, no dessert. Instead I curled up on the couch and watched the latest episode of Pretty Little Liars, so obsessed with that show it’s not even funny.
