Hello friends! Hope you are having a fabulous Monday and coming off of a great weekend like myself. This past weekend my little sister was in town from, California so you know that means the food was delicious, the workouts were fun, and there were lots of laughs shared over drinks. Today I’m recapping my weekend highlights and linking up with Meghan and Katie.
I’m going to start recapping with what we did on Thursday, even though that’s not considered the weekend, but when you’re a teacher everyday is Saturday in the Summer, hehe. After getting in a morning workout, some computer work done, and a doctor appointment we decided to go to Chipotle for lunch. Neither of us had eaten it in forever and it always reminds us of our hangouts together in high school (10 years ago, AH!). As always the guac was delicious and we left with full bellies to go and do some outlet shopping. We went to Tanger Outlets in National Harbor and I picked up some new work clothes from the Underarmour Outlet. Then we went to Whole Foods to pick up a few things for meals we wanted to make together. We literally spent over an hour walking around, and naming some of our favorite products. Then with groceries and wine we were heading back to Southern MD when we decided to stop at Tom’s football practice so she could see his school and Tom’s players.

Then it was home for some wine, Olympics, and tapas for the remainder of the evening. We made a beautiful cheese, cracker, and hummus plate, and snacked on this Pipcorn mini Truffle popcorn that was so addicting and delicious, great Whole Foods find!
Friday morning I logged into my Beachbody On Demand and did an Insanity Max 30 workout, gotta love some Sean T and that Beachbody gives you access to On Demand for 30 days FREE of charge! Then we spend the majority of the rest of the morning by the pool, resting and soaking up some sun. How is Summer almost over? I at least get the pool for another two weeks before it closes, so I need to take advantage of it. In the afternoon for lunch we made DIY spring rolls. I had never even had a spring roll, let alone made them myself, but we thought it would be a fun little activity. We cut up veggies, avocado, lettuce, and used kelp noodles to fill them. The rolling process is definitely pretty tricky, but by the end we were finally getting the hang of it. We kind of used this recipe for the Spring Rolls and I also made us a healthier Peanut Dipping Sauce and some Grilled Chicken Satay from my Whole 30 Cookbook. It was quite the lunch! And I was very happy to have lots of leftovers for myself this week.

The rest of the afternoon was just hanging out in the air conditioning watching old episodes of Sex and the City, along with the usually sister chats. Then we met up with our Uncle and his fiancé Betty for dinner at Galazio. If you’re local to Southern MD you definitely need to have a nice meal out here. It’s Greek cuisine, which is one of my favorites. I ordered the chicken kabobs that came with rice, pita bread, and broccolini which was all delicious!
Saturday morning I went over to my community gym and did my 30 Minute Treadmill Interval Workout and some Ab exercises.
Then we drove into DC to meet up with our older sister and her boyfriend. We had definite plans to find a restaurant that served Frosé (frozen rosé), always gotta try all the food/drink trends. The restaurant will be unnamed because honestly the service was terrible. However the view of the Georgetown Waterfront was beautiful and the food was pretty good, I had the Mahi Mahi tacos and a side salad. BUT the real winner, the Frosé, it was DELICIOUS and so refreshing! I could have sipped on it all day. I just need to learn how to make it at home now.

But because of the awful service a quick stop for lunch turned into a three hour adventure. So instead of going to some museums like we originally planned, we just did some shopping around Georgetown and then headed back to MD. I decided though that I need to do a Cupcake Crawl (can that be a thing?!?) because Georgetown has Georgetown Cupcake, Sprinkles, and Baked and Wired. All of which are within walking distance of each other and I can’t even decide which place is my favorite because they all have amazing desserts. A cupcake crawl would a fun day of tasting, and with wine perhaps…..?!?
Saturday night we watched more Olympics and made a Fig and Prosciutto Pizza. It was so yummy! I’ve never had a pizza I didn’t like, but I never would have thought of this combination myself and couldn’t stop talking about how good it was. I will definitely be making it again in the near future. Then it was an early bed night because my sisters flight was early Sunday morning. It was so hard to see her go, we were extremely close throughout our childhood and it’s really hard living on opposite parts of the country now as adults. But luckily her job is pretty flexible and she hopes to plan another visit this Fall and I’ll do my usually Summer LA trip.
The rest of Sunday was spent meal planning, prepping, cleaning, laundry, ALL that fun stuff because us teachers go back to work tomorrow. Throwback to one of my very first posts of the Foods I Prep Each Week, I should write an updated post, as that’s definitely changed a bit.
