Yay for Wednesday!  Every so often I like to participate in the link-up, What I Ate Wednesday hosted by Jenn, Arman, and Laura where we share a days worth of meals.  This is a very special WIAW because I’ve teamed up with Siggi’s Dairy and am running a giveaway for a months supply of Siggi’s yogurt!  I’m so excited about this Giveaway so be sure to read the end of the post for details on how to enter.

This post is everything I ate on Monday, usually on Monday’s I eat very clean to reset my body from a few drinks/desserts over the weekend.  But before we get to Monday’s eats can we take a moment to acknowledge how amazing these Big Giant Cinnamon Rolls were from Sally’s blog.  I prepped these Saturday afternoon and then baked them Sunday morning for brunch and they were sooooo delicious, I was on a sugar high pretty much the rest of the day.  And they definitely satisfied my sweet tooth.  So after indulging in these cinnamon rolls (yes throughout the day I ate two) Monday involved some very healthy eating.

Before heading out for a few errands I had half an Ezekiel Muffin with a little peanut butter.  I recently found that our grocery store has a Crunchy PB brand where the only ingredients are peanuts.  A clean crunchy PB is hard to find since we don’t have a Trader Joe’s or Whole Foods near by.

When I got back from errands I ate some leftovers.  The previous night we had grilled Honey-Chipotle BBQ Chicken Skewers and I roasted some of my favorite vegetables: brussels, sweet peppers, red onion, and mushrooms.  So I ate this all on a little bed of lettuce and with a lemon kombucha.  The store has been out of my usual favorite flavor Trilogy, but I’ve been enjoying this lemonade flavor.  In case you’ve never heard of kombucha it’s a fermented tea that’s full of probiotics to help support a healthy gut.  It definitely has a unique taste, but since I don’t drink soda I enjoy the flavor and fizziness.

As an afternoon snack I had a Siggi’s yogurt.  I tried Siggi’s once before and then got a chance to meet the founder Siggi himself at Blogfest.  He was born and raised in Iceland and after moving to the states he couldn’t find a smilier yogurt to what he grew up on.  Most of the yogurt brands sold in the US contain added sugars and artificial ingredients.  So he started making the Skry (a thick, creamy, high protein yogurt) in his NY kitchen and within months established Siggi’s Dairy.  Siggi’s products do not contain any artificial preservatives, thickeners, sweeteners, flavors or colors.  The yogurt comes from milk from dairy farms in Upstate NY and Wisconsin.  I just love the story and the Siggi’s team is so generous they teamed up with us at Blogfest and are giving away A MONTH’S SUPPLY to one lucky reader!

For dinner I had two Morning Star White Bean Chili Veggie Burgers with cheese and avo along with a salad and some cauliflower mash.  Morning Star Farms sponsored one of our lunches at Blogfest and I was really impressed with their new Vegan, Non-GMO plant based protein options.  So I decided to use a coupon I had and make tonights meal a ‘Meatless Monday’.  These burgers are so good you really don’t even miss the meat.

After dinner I sat down and enjoyed watching some of the Olympics and some of my reality TV favorites.  Anyone else obsessed with Bachelor in Paradise?  I love all the drama!  While watching some nighttime television I snacked on two homemade protein balls.  Still working on perfecting a recipe to share with you but it’s going to be some combination of chocolate protein, dates, oats, and PB.

    Ahh I love Siggi’s! So much protein! get the whole fat plain and add frozen berries (they melt before lunch) and a drizzle of honey. The vanilla is so good too just on it’s own!

    I love plain or vanilla yogurt and then I add my own fruit and cinnamon to it. Siggi’s makes a really good pumpkin spice flavor for the fall. I don’t want to win the yogurt though since I rarely ever eat it. Just commenting to say hi!

    Protein balls are like eating cookie dough for dessert! Also I love plain yogurt with peanut butter and granola and fruit. 🙂 All of these eats look so good. 🙂 Where do I find Ezekiel muffins? 🙂

      Yes protein balls are my new fav dessert. I found Ezekiel muffins at my local grocery store, they’re in the freezer section by the pizza. Whole foods always has them too.

    I love themed everything so sometimes i think about themes for meals. Whether or not my husband actually notices is quite another thing..haha its fun for me though. I love a wok wednesday where i do a stir fry or taco tuesday. Looks like a yummy day of eats!

    I love Siggi’s yogurt! My all time favorite is vanilla, but I especially loved their seasonal vanilla & cardamom. Love it with raspberries and peanut butter!

    Oh my gosh, those cinnamon buns look GLORIOUS. I love the rhubarb flavor, but all of them are amazing!

    I love Siggi’s yogurt! My favorite flavor is either plain or strawberry rhubarb. Usually, I top it with berries, PB, and some sort of granola. 🙂

    I’ve totally never tried this brand of yogurt!! I tend to stick to plain greek yogurts or non-dairy yogurts if my tummy is bothering me. The added sugar tends to upset my sensitive stomach!
    We totally do have themed meal nights! Taco Tuesday for Tuesdays and of course Meatless Monday! 😉

    My favorite flavor by far is the Pumpkin Spice! I just adore the texture of this yogurt, it’s wonderful in smoothies!
    Also your eats look awesome! Those cinnamon rolls look absolutely divine!

    I like vanilla yogurt and adding pure maple syrup to it 😀 But I like adding maple syrup to almost anything…

    If I have time, I enjoy maple roasted peaches with pecan granola on Siggis yogurt, if I don’t have time… just vanilla granola with berries and bananas!

    I love Siggis! They are my favorite yogurt brand – love putting hemp seeds and toasted almonds In the coconut cream flavor with a few slices of pineapple – it’s like a vacation in a cup!
