Happy Hump Day. I hope you are having a great week and are getting excited because the weekend is only a few days away! It’s been awhile since I’ve done a What I Ate Wednesday post so I thought now that I’m back at work it would be a good time to share all my eats from a busy work day. Today I’m sharing everything I ate yesterday (Tuesday). Many of my eats are prepped ahead of time, so I hope this can give you a little meal prep inspo as well!

Tuesday I woke up at my usual 5:00 am and did some upper body strength training similar to my Arms and Abs Circuit Workout. Then I had my usual breakfast, vanilla shakeology and unsweetened almond milk blended with strawberries and a few banana slices. I’ve also been adding Maca Powder for some added nutrients and to see if it helps give me extra energy, still undecided on its effectiveness. I make two shakes in my Vitamix every morning. One for me and one for the husband to take and drink in the afternoon. He really enjoys them too =)
When I got to work, after doing my morning routine and duties as the kids roll into school I sat down and had some Overnight Oats similar to this Espresso Overnight Oats with Salted Date Caramel recipe, I also added a little cocoa powder to make them ‘mocha’ flavored. And I shared a photo on my Snapchat. They were ok, I honestly prefer warm oatmeal and have just been prepping some overnight ones because they’re so easy to grab and go in the morning. So if you’re always in a rush out the door, I highly suggest prepping some of these ahead of time to make the mornings easier. My PB&J Overnight Oats is still one of my favorite recipes.
I have a Kindergarten class in the gym right before my lunch so by the time I get to sit down I’m definitely HUNGRY. Those little kids can wear you out, mostly because I just like to play and run around with them too. For lunch I had prepped a bunch of salads for the week with Italian Chicken and raw veggies. I also snacked on a few apple slices and drank lots of water.
When I get home from work I usually walk the dog and then eat a little snack before I sit down and work on a few blog and challenge group things. Yesterday I had two hard boiled eggs (prepped on Sunday) and half of this kombucha after our walk. I’m obsessed with this Trilogy flavor, it’s by far my fav. And also I have no idea how it took me so long to realize hard boil eggs peel a thousand times easier and won’t smell up your fridge if you leave them in the shell until you’re ready to eat. I just peel them quickly, running them under cold water when I get home and it takes two seconds. The little things in life =)
For dinner, you guessed it, some form of Taco Tuesday. Since watching an episode of Keeping up with the Kardashians where they were in Cuba a few weeks ago I have been wanting to cook a Cuban dish. I found this Chicken and Rice recipe on Pinterest and decided to give it a try. It was cuban spiced chicken with rice and mango & black bean salsa with some plantains. Delicious! After getting all the dishes cleared up I sat down and had a Chocolate Peanut Butter Protein Ball. So yummy and sweet tooth satisfied.
Tuesday nights used to include me curled up on the couch watching Pretty Little Liars, but the season recently ended. Anyone else so upset the new one isn’t starting until APRIL!!! How am I supposed to wait that long. I might have to start watching older episodes to fill my PLL need. That’s it for all my eats.
