Hello friends and Happy Martin Luther King Day. Hoping you are enjoying your three day weekend! In light of everything our country has been through the past year and whats to come I think it’s important to remember one of MLK’s messages today. One of my favorite quotes, “Darkness cannot drive out darkness; only light can do that. Hate cannot drive out hate; only love can do that.” -MLK Now lets get to all the Weekend Highlights. Friday night I had a hair appointment, went to Target for a few necceseties, and then ended the night with some Turkey Tacos and Vanderpump Rules on the couch. Crazy Friday night I know. Saturday morning I was up early and did a Treadmill Interval Workout and this Ab Circuit along with a few extra exercise with weights. These weighted jackknives are one of my new favorite moves.
After my workout I came home, drank a shake, cleaned up house, and got ready to head out to run a few errands with Tom. We went up to the mall and both ended up purchasing a new pants for work. I am especially loving these Underarmour Joggers I purchased in grey and Tom got a similar pair in black, matching power couple 😉 We also went into Home Goods to look at decor for our new corner bookshelf, but no luck. Anyone have tips on styling a bookshelf? When we got home I headed to the grocery store for the weeks worth of groceries. We have yummy meals planned this week like Smoked Chicken, Pizza Spaghetti Squash Pie, and Copycat Chipotle Burrito Bowls. YUM! For dinner we decided to try a new Korean BBQ place recently opened near us called Spoons. I had a pear cucumber margarita to drink and we snacked on BBQ pork hush puppies before our meals.
Tom went for the traditional BBQ and ordered ribs and I had the Korean Bibimbap with Bulgogi Beef. The food was EXCELLENT. However we were pretty disappointed about the service. Workers just didn’t look eager or willing to work and while they didn’t seem extremely busy our food took awhile. On the way home we discussed that we would like to return to try other items on the menu, but the poor service was a major disappointment.
For the remainder of Saturday evening we curled up on the couch and watched The Girl on the Train On Demand. Neither of us had read the book, so we were constantly guessing and creating theories throughout the entire movie. It was good and definitely slightly similar to Gone Girl, both I highly suggest.
Sunday morning I made us some yummy bacon, egg, cheese, and avocado sandwiches with the Dave’s Killer bread I mentioned in my Friday Favorites. It was the perfect way to start our Sunday. After breakfast I decided to do some yoga and then got right to the laundry and a little meal prepping before the Football games started. Tom prepped and started smoking some chicken leg quarters and thighs for us this week. I also made these Jalapeño Bacon Loaded Potatoes to go with the chicken and football watching.
Oh and how could I forget dessert?!? The day I don’t leave you all with something sweet you should be worried! I had been having serious chocolate and peanut butter cravings, so I made these Peanut Butter Blondies and added some extra chocolate chips. Delicious!

The best thing I’ve eaten recently is a BBQ tempeh sandwich from my work. It hit all the right spots!

It always sucks when you have good food and bad service. That’s when I always go on to Yelp and write a truly honest review!

I’ve also never been to a Korean BBQ place but I’m quite curious. Its on my foodie bucketlist of things to experience. What a loaded weekend with a perfect balance of movement, relaxation and good food! You always do weekends sooo right.

I could physically see people just standing around, the place was dead, and I had to ask 3 times to even get a glass of water. I really should see if they’re still open & try it again. But I can’t handle service like that when it’s not a rush time. But damn was that food good.
Those hush puppies do sound amazing though!

February 1, 2017 at 6:40 am (6 years ago)I love good Korean food! Bibimpap, Gimbap (Korean rice roll), and the Samgyeopsal! YUM! Too bad that the Korean restaurant has poor service.. I had a lunch out with my husband a few days ago, we ate at a Japanese restaurant, and the food was amazing, we had California market, Giza, katsudon, and gyudon! The next day, I had to burn all the carbs, I’ve eaten. 🙂 By the way, your grilled chicken looks delicious! Do you marinate it before grilling it? Can you share me your recipes? Thanks so much!
