Yay for making it halfway through the week. This is our last full week of school before Spring Break next week, so I am anxiously awaiting Friday afternoon! The last week has been a roller coaster. Last Wednesday I could barely hold myself up at work, went to the doctor and found out I had the flu. I was so bummed because I always try to be super healthy, wash my hands, but sometimes there’s no avoiding it. I was supposed to run a 10 mile race last Sunday, but because I still had a few flu symptoms, I decided to sit it out. I told myself there will be plenty of other races and I needed to do what was best for my health. It was really hard for me but I think I made the right choice. I went back to work on Monday and after having no appetite, to only craving crackers and ice cream while sick I was ready for a week of healthy eating. So I figured what a perfect time to share a day of eats through the What I Ate Wednesday link party with Jenn.
I took several days off of working out when I was sick , so it felt good to get back into it, the only not so good part was waking up at 5 am. On Tuesday I went over to our community gym to do some treadmill intervals. I did something similar to this workout for about four miles. Then ended with this ab routine, it’s my favorite, I always feel the burn by the end. After stretching I headed home to blend up a smoothie and shower. I had a smoothie with spinach, banana, strawberries, and vanilla Shakeology and also had some coffee and water while sitting watching the news and reading other blogs before finishing getting ready for work.
Around 9ish I ate some steel-cut oats with egg whites, cinnamon, and a tablespoon of almond butter. I usually make a large batch of steel-cut oats in the crockpot on Sunday and add half a carton of egg whites with about 30 minutes left. Then portion them in containers with cinnamon and almond butter so I can have them at my desk at work to help keep me full until lunch. There are some people who would combine this with a supplement to help keep them fuller for longer, for example, checking out a Bio X4 review to look at what they can do is a route that people may go down if it’ll suit their lifestyle and food intake, however, for me, the oats and almond butter fills me right up.
For lunch Tuesday I had some leftover Greek grilled chicken and veggies wrapped in bibb lettuce with a side of tzatziki. I also snacked on a small portion of almonds, I always need to portion almonds or mixed nuts or I’ll eat WAY too many.
Late afternoon when I got home I walked the dog I snacked on two hard boiled eggs and some kombucha. I then continued to practice Bodypump choreography as I hope to submit my testing video next week to officially get certified as a Les Mills Instructor.
After about 45 minutes of practice I started prepping dinner. I tried something new based on one of our favorite low carb meals, this Pizza Spaghetti Squash Pie, but I wanted to turn it into a taco bake. I baked the spaghetti squash then pulled all the ‘spaghetti strings’, is there a technical term for these?!? I cooked up some grass-fed beef, onion, and red pepper, added homemade taco seasoning and a can of tomatoes. Then combined the spaghetti squash, beef mixture, and three eggs and baked for an hour. Toppings could be cheese, avocado, cilantro, sour cream, hot sauce, etc. I choose avocado, cilantro, and some hot sauce. It was delicious and I’ll definitely have to share an exact recipe with you soon.
After all the dishes were cleared, I took two Chocolate ‘Caramel’ Protein Fudge Bites out of the freezer from a large batch I had prepped last week and finished the last episode of This Is Us. I had started watching it back in the Fall and then forgot about it, but kept hearing everyone rave about the show. While I was sick I binge watched the entire first season and OMG so good. I love how there was something I can relate to in each episode and don’t think I’ll be needing a good cry for awhile now.
