Growing up I remember loving the mornings when I would wake up to the smell of fresh pancakes from the kitchen. This past weekend after the passing of my grandfather I spent time home in Cleveland with my family. We talked about the past, memories from growing up, and how certain foods make us reflect on old experiences. Pancakes were always the breakfast or brunch tradition for any holiday or on a weekend where we weren’t running off to church or soccer practice. Now that I’m older I love meal prepping breakfast foods such as better for you pancakes for my husband and I to eat throughout the week with our morning coffee before work. In my opinion nothing pairs better than a sweet breakfast and a good cup of coffee. This pancake recipe is made better for you from my Grandma’s recipe with a few simple ingredient swaps.
I used a special key ingredient, Simply Pure Vanilla Coffee Creamer purchased from Walmart in the milk and dairy section to slightly sweeten the pancake batter. Simply Pure Vanilla Coffee Creamer is made with only five simple ingredients and have no artificial flavors or colors. So I feel good using it to make my morning coffee more flavorful and loved the idea of using it in a recipe. Just one tablespoon of creamer added to the pancake batter really gives them the perfect amount of sweetness.
I use whole wheat flour for the added fiber and nutrients. I highly suggest sifting the dry ingredients together because it helps break up the flour. To make the recipe better for you and lower in fat I also replaced oil with yogurt. I often double or triple the recipe so we can easily warm up a quick breakfast during the busy work week. And you better believe my husband and I never forget our morning coffee as well. We both work long days and between work, workouts, cooking, and things around the house, coffee is used to fuel most of our activities.
- 1 cup whole wheat flour
- 1 tablespoon Simply Pure Vanilla Coffee Creamer
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 3 tablespoons vanilla or plain greek yogurt
- Sift together the whole wheat flour, baking powder, and salt in a large bowl.
- Whisk the coffee creamer, milk, egg, and yogurt then add to the dry ingredients mix and whisk to combine.
- Heat griddle or pan to medium heat with a little oil or butter.
- Add 1/2 cup of batter. Flip once bubbles begin to pop.
- Top with maple syrup, fruit, or nut butter.
- Enjoy while sipping on a cup of coffee with Simply Pure Vanilla or Caramel Coffee Creamers.
