Hey friends, how’s your week going?  Not gonna lie, mine is kind of dragging.  The only thing getting me through is the thought that the weekend is only a few days away.  Today for What I Ate Wednesday I’m sharing everything I ate on Sunday, since I didn’t post a Weekend Highlights with all the delicious eats.  Be sure to check out the end of the post where my friends at Frontier Snacks and I are running a Frontier Bites giveaway for you all.

Sunday I woke up around 8 A.M. seriously what is sleeping in anymore?  It used to be 9 for me on Sunday, now it’s getting earlier.  After taking the dog for a quick walk I decided to take advantage of the quiet neighborhood and cooler temperatures for a long run.  I did a little over 6 miles in an hour, stretched, and then headed to the kitchen for breakfast.  I made a protein shake with the New Vanilla Vegan Shakeology, almond milk, half a banana, and some PB2, such a delicious combo and I have to say I’m really loving the Vanilla Vegan flavor.  It tastes really good and is a great dairy free protein alternative.  While sipping on my shake I did some Sunday morning reading and browsed Pinterest.

I knew after running 6 miles I would need more than just a shake so I also made two fried eggs and warmed up some leftover roasted Brussels sprouts, yum.  One day I need to recreate the brussels sprouts benedict I had at Easter Brunch.

Then after doing some meal prep; hard boiled eggs, oatmeal bake, chicken and cauliflower rice, I was hungry for a little snack.  I ate a few of the Almond Blueberry Lemon and Pumpkin Seed Apple Vanilla Bean Frontier Bites.  They are bite sized snack pieces made with fruit, nuts, and seeds.  All Frontier Bites are gluten, soy, and dairy free, they are non GMO verified, and made with a few simple ingredients.

The brand started because two brothers wanted to create a better alternative to over processed energy bars, can I get an amen!  The bites come in five different flavors and are great for when you’re on the go or when you just need a light pick me up snack.  I have been taking a few with me in my lunch or snacking on them in between meals for more energy.  They are currently only available in stores on the west coast, but can easily be purchased online.  And lucky for you I’ve teamed up with my friends at Frontier Bites to give away a variety pack to one lucky reader.  Read the end of this post for more details.

The bites held me over until it was dinner time.  I had done the laundry, made a dessert, walked the dog, and ran a few errands and was so ready for some pizza.  I made the dough using this recipe and then we topped each pizza with green pepper, onion, mushrooms, jalapeño, Italian sausage, and pepperoni with mozzarella cheese.  Seriously what topping did we leave off?  Then for dessert we had a little treat you’ll have to come back to check out on Friday.

    I snack right throughout the day by constantly having fresh fruits & vegetables on hand and precut along with either hummus or yogurt to dip them in!It sounds hard for a busy day, but it really is easy!

    Yum! That dinner looks fantastic! Go to pizza toppings are spinach, mushrooms, and onions. I’ve also been loving banana peppers lately!

    I always try to be prepared and take healthy snacks with us. At home I have a spot in the pantry for packaged snacks ready to grab and go.

    I love how you decided to do a spontaneous 6 mile run because of the cooler temperatures. And a smoothie + eggs sounds like really good refuel. On a busy day I love to snack on bananas and PB or a cookie or trail mix …

      Definitely keep an eye out for them, I like that they’re crunchy and you can just eat a few of them without having to have an entire granola bar.
