Friday! We made it! And what a great weekend it’s going to be with Mother’s Day on Sunday. Growing up my sisters, dad, and I used to let Mom sleep in as we prepared her breakfast. Once she had eaten breakfast, we would normally all head downstairs so she could open her gifts. Buying Mother’s Day gifts can be difficult, but we usually find that she appreciates personalized gifts (or Cadeaux Personnalisés as the French would say) more than store-bought gifts. Personalized items are much more special and thoughtful, so it’s understandable that she prefers them. Anyway, back to breakfast. Usually, it was probably just scrambled eggs or a ham and cheese omelet and toast, but she was always so delighted to eat in bed with her girls….. or so I remember it, lol. When it comes to food I always think Mother’s Day should be about a fabulous brunch while dad’s on Father’s day get anything from the grill or smoker. I wish my mom lived closer so I could spoil her all day long with food and pampering, but I guess that’s what her visits are for. Today I’ve rounded up some of my favorite sweet and savory Brunch recipes you can make for Mom on her special day 😉 As an extra treat, it may be worth looking at personalised Hamperlicious gifts to add to all of these edible goodies!

Ham and Cheese Strata- The combo of ham and gruyere cheese is delicious in this recipe!
Slow Cooker Breakfast Casserole- Let the slow cooker do all the work in this meat, cheese, egg, and potato casserole.
Spinach, Feta, and Artichoke Breakfast Bake- Can’t go wrong with this combo, light and delicious.
Denver Egg Cups- If hosting a brunch these are a great way to give everyone a little taste.
Brunch Enchiladas- I love how when you bake these the eggs cook right into the tortillas.
Baked Blueberry Lemon French Toast– I’m obsessed with french toast bakes over traditional french toast. This is a great recipe for Spring.
Lemon Ricotta Pancakes– Super soft and fluffy pancakes. I love the ricotta and lemon together.
Whole Grain Carrot Cake Muffins- Extend carrot cake season all Spring long.
Angel Food Cake French Toast- Turning dessert into the main dish at breakfast, yes!
Vanilla Cream Filled Doughnuts- These are very high on my ‘to make’ baking list.
Better For You Pancakes- Pancakes made with better for you ingredients such as whole wheat flour and yogurt.
Belgian Waffles- Belgian waffles don’t have to just be made in hotels, make them at home with this delicious recipe
Last weekend for dessert I wanted to try a Spring Recipe so I made these Strawberry Cupcakes with Creamy Strawberry Buttercream.
My husband and I both being huge chocolate fans absolutely LOVED these cupcakes. They did take some more work than most cupcakes I’ve made, but gosh were they worth it.
If not for Mother’s Day I suggest baking them for any Spring gathering or cookout you have coming up. They will sure be a crowd pleaser! And they’re healthy because of the strawberries right? hehe.
