Hello friends hope you had a wonderful weekend and maybe even got to spend some time with Dad for Father’s Day. This week my parents and little sister are coming into town for my uncle’s wedding , so we’re planning to have a special day for Dad with all his girls. This past week was my first week of Summer Vacation, throughout break I plan on sharing a Week in Review highlighting meals, workouts, and small accomplishments.
Eats from the Week
It’s been hot in Southern MD and humid, I don’t even think we had a Spring this year. I always crave chicken salad for lunch in the heat. I made a Curry Chicken Salad from the Skinnytaste cookbook and ate it wrapped in collard green wraps for lunches during the week.
I love having the extra time to cook dinners when I’m off in the Summer. One night I made these Banh Mi Bowls using chicken thighs. The Crispy Chicken was SO good, almost tasted like bacon.

During the weekend I attended a baby shower on Saturday and shared all the cute Space themed decor on Insta Stories. Tom and I went out for dinner and drinks together and ordered my favorite pizza combo, jalapeño and pepperoni from Red Oak Bistro, Mmmm spicy.
In honor of Father’s Day Sunday morning I made a Coffee Cake. Growing up if Dad was out running errands on the weekends he alwayssss came home with a coffee cake and doughnut holes. Can you tell where I get my love of sweets from? I saved Dad a piece for this weekend.
Then Sunday night we smoked chicken using the BEST gift I ever bought Tom and I made a hot potato salad with green beans which is one of Tom’s favorite meals. He is a dog dad after all, so we had to celebrate.
Monday: Beachbody On Demand Insanity Max 30 Workout and 10 Minute ABS
Tuesday: Practiced Bodypump 101 for when I sub
Wednesday: Went to a Pilates ProWorks class using Classpass
Thursday: Leg workout posted on Insta Stories
Friday: Treadmill Speed Workout followed by this Ab Routine
Saturday: Upper Body
Sunday: Went for a walk along the river at a local park with Tom
And for other accomplishments throughout the week I picked up some Summer Reading books, starting with The Husbands Secret.
I published two blog posts last week, a must try Cherry Pie Smoothie Recipe and Father’s Day Favorites, not too late to get dad a gift or spend some extra time with him.
Also spent some time cleaning and getting the house ready for when my family comes to stay with us this week.
And thanks to Megan and Kelli for sharing my Summer Bucket List, I accomplished a few things on it this week.
