Hello friends hope you had a wonderful weekend and maybe even got to spend some time with Dad for Father’s Day.  This week my parents and little sister are coming into town for my uncle’s wedding , so we’re planning to have a special day for Dad with all his girls.  This past week was my first week of Summer Vacation, throughout break I plan on sharing a Week in Review highlighting meals, workouts, and small accomplishments.

Eats from the Week

It’s been hot in Southern MD and humid, I don’t even think we had a Spring this year.  I always crave chicken salad for lunch in the heat.  I made a Curry Chicken Salad from the Skinnytaste cookbook and ate it wrapped in collard green wraps for lunches during the week.

I love having the extra time to cook dinners when I’m off in the Summer.  One night I made these Banh Mi Bowls using chicken thighs.  The Crispy Chicken was SO good, almost tasted like bacon.

I photographed Enchilada Stuffed Sweet Potatoes and Blueberry Pie Steel Cut Oats and will have the recipes to you soon.

During the weekend I attended a baby shower on Saturday and shared all the cute Space themed decor on Insta Stories.  Tom and I went out for dinner and drinks together and ordered my favorite pizza combo, jalapeño and pepperoni from Red Oak Bistro, Mmmm spicy.

In honor of Father’s Day Sunday morning I made a Coffee Cake.  Growing up if Dad was out running errands on the weekends he alwayssss came home with a coffee cake and doughnut holes.  Can you tell where I get my love of sweets from?  I saved Dad a piece for this weekend.

Then Sunday night we smoked chicken using the BEST gift I ever bought Tom and I made a hot potato salad with green beans which is one of Tom’s favorite meals.  He is a dog dad after all, so we had to celebrate.

And for other accomplishments throughout the week I picked up some Summer Reading books, starting with The Husbands Secret.

I published two blog posts last week, a must try Cherry Pie Smoothie Recipe and Father’s Day Favorites, not too late to get dad a gift or spend some extra time with him.

Also spent some time cleaning and getting the house ready for when my family comes to stay with us this week.

And thanks to Megan and Kelli for sharing my Summer Bucket List, I accomplished a few things on it this week.

That pretty much wraps up the first week of Summer vacation.

It sounds like it was a great first week of summer vacation. The coffee cakes looks like a delicious, and thoughtful, way to give to your dad. And the park where you walked is stunning. I underestimate how enjoyable a good walk can be, especially when you’re in a lovely place.

Thanks Emily, it was pretty tasty. I had never made one before and my Dad used to always buy the store bought kinds. Homemade is 1000 times better!

Woooo hooo you are starting summer vacation off RIGHT. Your meals and baking episodes are amazing. That curry chicken salad sounds glorious, followed by a big slice of coffee cake. One of my favorites.

Yes I never want to waste a day of Summer vacation away. It’s currently raining though and going to storm, so probably gonna curl up with a book or some blog work. Have a great week Cora.

I think we’re both on a food trend right now. It feels so good to have a little time and energy for cooking. I’m super inspired by my CSA and garden right now so it’s been fabulous.

My dad always brought donuts home on weekends after his runs. Love those memories. Have a great time with your family this week.

What a lovely week! I wish I was cooking it up this week, but we are going out a bunch and I am working dinners the other nights. Makes me sad that we got our CSA this week!

Going out is always fun though. I love trying new restaurants or a new dish. Enjoy and maybe you’ll be back in the kitchen next week.

It was so good. I realized though I definitely should have halved the recipe, it made so much cake, lol

That coffee cake seriously looks AMAZING. I have a major sweet tooth too, I have a hard time resisting that kind of stuff! 🙂

I can’t resist sweet either. Plus I love baking them, so I try to pick one treat a week and eat it on the weekend 😉

Yes the collard green wraps were great. Then I read that you can blanch them to make them softer, wish I would have thought of that before eating a bunch of them last week.

That collard wrap though….I need that in my life. I should try making some. Those will be easy work lunches since I’m not off for summers anymore now that I’m not teaching.

Yes the wraps were such easy lunches. I read this week though to blanch the collard greens for a few seconds to make the wrap not so crunchy. I really want to try it that way now.
