Hi and thanks for stopping by the blog today.  Hope you had a great weekend mixed with some fun and relaxation.  Our weekend was extremely similar to last, in fact I felt like I was reliving it.  Only difference was I changed up some workouts and meals, all other down time was spend doing things around the house or lounging by the pool.  So instead of just sharing the Weekend Highlights, this post has new workouts and recipes I tried last week for Meghan’s Week in Review link up.

Last week I published two new recipe posts.  And these are recipes we eat ALL the time and should definitely be added to your weekly meal prep.

I completed one of the items on my Summer Bucket List and tried TWO new workout classes.  I took Hot Power Fusion Yoga at CorePower Yoga, I’m not new to CorePower, but had never taken that particular class before.  Probably not the best idea to be doing hot yoga when the heat index was over 100, buttttt I sure sweated out a lot of toxins and it was a great stretch.

And I am almost embarrassed to say that I took my first Orangetheory Fitness Class, I know I’m super late to the party.  In case you’re not familiar with Oragnethoery it’s a mix of being on the treadmill, row machine, and doing floor exercises.  I loved it and will write a class review after I visit a few more times.

Last week I had two lunch dates.  One with my older sister, I went into the city to meet her at Modern Market on her work break.

And the other with Tom at Panera before he headed to school for the evening football weight training.  I could eat their Strawberry Poppyseed Chicken Salad every day.

I hate hate hate wasting food.  So after last weekends pizza night, I realized I had a bunch of cheeses leftover; mozzarella, parmesan, provolone, and ricotta and needed to use the up before they went bad.  I had frozen spinach and homemade marinara in the freezer, and combined this all with some ground turkey and Banza Chickpea Penne to make an easy pasta bake.

Saturday night we decided on a Mexican themed dinner.  I prepped salsa and guac, before we headed to the pool for a few hours.  Then made taco chicken burgers on the grill.  We wrapped them in tortillas and grilled the tortilla burgers for a few seconds on each side.  They were so good and paired perfectly with my spicy jalapeño margaritas.

And to end things on a sweet note, we made doughnuts, yes full on fried goodness doughnuts.  I was super nervous the first time I tried frying them a few months ago, but with a large pot it’s actually pretty easy.  I used this recipe but made them a bit smaller.  Tom was in charge of glazing and topping when they came out.  We used cinnamon sugar on some and a maple glaze on the others.  I seriously can’t pick a favorite, they’re both amazing.

    We had donuts in Japan for the first time thing weekend. I am all about the donut holes!

    I seriously need to try a new workout. I am considering a power yoga class.

      Your donuts looked so good. I used to not really like either, I was more of a cake person, but I’ve been loving all doughnuts lately. And I love that power yoga moves a bit faster and you don’t need to hold poses for super long.

    Oh my goodness homemade donuts! What a treat. New workout classes do wonders for my motivation levels, both sound like they were a blast. And your oatmeal bake looks awesome. Can’t wait to give it a try!

      The donuts were SO good, maple glaze is so amazing. I could just eat the glaze itself. And yes new workouts are a great motivation. I find small fitness studios in general pretty motivating. And I hope you give the oatmeal bake a try 🙂

    Those donuts! I die over anything maple glazed. I’ve been wanting to try an Orangetheory class (I’m late to the party too) and I’m glad you enjoyed it. And do I spy spindrift? <3

      Yes I could eat the maple glaze by itself, in fact I did, lol. You definitely need to get to an OTF class, I love trying new studios, it’s so fun. And yes spindrift, love it and can’t live without it or La Croix now 🙂

    I love core power too not as much when it is so hot out but I do feel amazing after those classes. All your eats look yummy this week!

    I keep meaning to try and make doughnuts, but also put it off because they seem so intimidating! Looks like a fabulous week of eating to me!

      Hi Heather! I highly suggest you try them. I was super intimidated at first too. I highly suggest following Sally’s Baking Addiction, she’s very detailed in her recipes and has a lot of tips. Good luck if you try them!

    There’s so much yummy food in this post! I make energy bites on an almost weekly basis to have around for an easy snack. I love pasta bakes, and those donuts look heavenly!

    those donuts (emoji with heart eyesssss). the highlight of my weekend was definitely the beach! and come to think of it i really should try out a new workout class!! Orange Theory is coming to Baltimore so I’m dying to try it!

      Yes I have been loving seeing your pics of the beach, what a nice vaca. And you definitely need to try Orangetheory when it opens. Do you have a Flywheel? That’s probably my favorite fitness studio.

    Sometimes you gotta go for the real deal doughnut, fried and all. Yours look like magical unicorns with puppy dog tears of joy.

    I can’t remember the last time I tried a new workout, but I’m not sweating it. Literally, bahahaha.
