Hello and happy hump day. One of my favorite blogging traditions halfway through the week is to share a day in the life and all my meals for What I Ate Wednesday. Today’s eats are what I ate over the weekend. Some weekends we find ourselves enjoying dining out and others, like this past weekend I find joy in spending time cooking in the kitchen.
My breakfasts are usually a smoothie or yogurt bowl even on the weekends, I almost always crave something sweet in the morning. On Sunday after doing a yoga video I put together a yogurt bowl with Siggi’s Vanilla yogurt.
Siggi’s is my favorite yogurt brands because their yogurts are made with simple ingredients and not a lot of sugar. Did you know many other brands use artificial sweeteners, preservatives, and coloring, YUCK! Not Siggi’s, you can pronounce every ingredient on the list. I also had the pleasure of meeting Siggi himself at last years Idea World Blogfest and it was incredible listening to his story on how he started Siggi’s yogurt. He’s from Iceland and missed the Icelandic style yogurt in their country, skyr, and started making and selling skyr in his NYC apartment. And now Siggi’s has grown into a huge successful company and is only getting bigger.
In my yogurt bowl I added roasted sweet potatoes (try it, it’s delicious), strawberry and banana slices, sliced almonds, chia seeds, and almond butter. The topping possibilities are endless when it comes to yogurt bowls, but these are my favorite.

After breakfast I did my usual Sunday to do’s; cleaned up around the house and did some prepping for dinner. We then decided to head to the pool since it was a sunny beautiful day in southern MD. I ate leftover Harissa chicken, naan with tzatziki, and a cucumber, kale, tomato salad for lunch before we headed out to catch some rays.
We read, chatted, and slept for a few hours poolside. Currently reading Sharp Objects by Gillian Flynn author of Gone Girl. I’m halfway through and don’t want to put it down as I have no idea how this one is going to end.
When we got back from the pool it was time to start cooking dinner. I had some chicken thighs marinating in Peri Peri sauce, a copycat of Nando’s. And prepped a mango and lime broccoli slaw earlier. So I just had to cook some cilantro lime rice while Tom grilled the chicken.
I had made two desserts over the weekend, this Paleo Double Chocolate Zucchini Bread and these Seriously Fudgy Homemade Brownies, because #balance. Both were delicious!
