Just like that it’s Monday and we’re at the start of a new week.  Seriously where does the weekend time go?  I actually woke up Friday to an alert for an unexpected day off due to the high winds that was affecting the whole east coast.  I was excited for a little sleep in, but the winds did sure sound creepy.  Luckily we didn’t lose power but several friends did.  Hoping this week is back to normal and mother nature can give us some sunny and warm March days.

The day off flew by, I did an arm workout, hung around on the couch watching morning TV, and did a few things around the house before I was hungry for lunch.  I had my lunch prepped for work but got to eat it at home, a little ground turkey and cauliflower rice blend.

Food and Fun over the Weekend

Later in the afternoon I had to visit two grocery stores before I found one that had power, thank you Mom’s Organic Market for using wind power, ironic right.  When I got home from the store I used some ripe bananas to make a protein banana bread.  Then decided to relax the rest of the night with my latest read I shared in last Friday Favorites Post.  Tom was at a football clinic and home later so I just ate some not very exciting leftovers for dinner.

Homemade Protein Banana Bread

Saturday I was up early to meet my sister for a Flywheel class.  A good spin is one of my favorite ways to start the day.  After class we shopped a bit at Nordstrom Rack, I purchased this workout sweatshirt and a simple everyday pair of earrings.

Then we decided to lunch at Poke Papa, one of our faves.  At Poke Papa you build your own poke bowl, poke is marinated raw ahi tuna and it’s so delicious.  They have other proteins as well such as salmon, shrimp, etc, and so many different toppings and sauces.

Poke Papa Washington DC

I did a bowl with half black rice half greens, with poke and salmon, and then seaweed salad, cucumber, watermelon radishes, scallions, avocado, and sweet and spicy sauces for toppings.  I love sushi but poke bowls have been my favorite lately.

With full bellies we walked back to my sisters place.  I checked my steps later in the day and had a total of over 7 miles, love visiting the city and being able to walk everywhere!

Once I got back to southern MD the rest of Saturday flew by.  We attended the girls Varsity Basketball playoff game at Tom’s high school in the evening and they won!  Then came home for sandwiches and TV shows on the DVR before calling it a night.

Typical Sunday, a little sleep in followed by a yoga video.  Then laundry, meal prep, baking, and relaxing the rest of the day.

Brown Butter Chocolate Chip Cookie Dough

Tom smoked chicken thighs dinner and I tried a different side, these Zucchini Tater Tots.  And we had Brown Butter Chocolate Chip Cookies for dessert.  We kinda watched some of the Oscars, but I hadn’t seen any of the movies so I have a hard time really getting into it.

Menu and a NatureBox Snack GIVEAWAY

Many of you have asked what I meal prep each week and plan for dinner each night so I’m going to try to start sharing that here on the blog a bit more.  This weeks dinner menu includes:

Monday: Maple Crusted Salmon with my Perfectly Roasted Veggies
Tuesday: Sheet Pan Poblano Chicken Fajitas
Wednesday: Minestrone Soup
Thursday: Vegetable Frittata with Chicken Sausage

My favorite snacks are protein bars (that I make) because they’re so quick and easy! Or anything that’s made with good ingredients that I can grab and go. Nordstrom rack is so fun to shop at!

I totally agree I usually make my own snacks or pick something with simple ingredients. And isn’t Nordstrom Rack the best, I always find a million things I want!

A surprise day off always makes for a refreshing change of routine. Those winds sound a bit scary though – and that all the grocery stores didn’t have power! Not good!

I’ve never had a poke bowl, but considering my love for sushi, I can only assume I’d be all in.

Oh If you love sushi you would definitely be a poke fan Cora! Hope you have a great week 🙂

We used to get Nature’s Box snacks at work and they were so good, and I loved the ingredient list.

I’m glad you were able to enjoy the extra day off (how fun) and have a nice morning with your sister. Those poke bowls look great; watermelon radishes make everything so pretty.

Happy Monday, and thanks for linking up.

I know the avocado and watermelon radishes make them so beautiful right! I love food but when it’s pretty like that it’s a major win 😉

Trail mix can be so addictive! Don’t Sundays always seem to fly by with adulting stuff? Actually, I feel like I spent my entire last weekend taking care of house stuff, bills, laundry, etc. I like that you spend part of your Sundays baking! That’s always a fun low-key thing to do on a Sunday – or any day for that matter 🙂

Yes I totally agree, Sundays fly by with all the adulating. Saturday is the only fun day on the weekend. But yes I do love at least doing some baking on Sunday, I need my sweet fix before starting the work week, lol.

An unexpected day off is pretty exciting! And I’m loving the look of that poke bowl. We have a couple new poke eateries near me that I’ve yet to try — now I’m inspired to go! 🙂

That poke bowl looks AMAZING! Though if I had to pick, I’d opt for sushi.

I’ve tried Naturebox’s snacks. Loved their animal crackers!!

OH I almost ordered the animal crackers. I should have ventured out a bit from my traditional nuts and trail mix snacks, but ended up ordering most of those. Hope you entered the giveaway!
