Weekly Menu Recap:

Monday: Salmon with maple syrup, chili powder, and paprika and a side of roasted vegetables.

Tuesday: I had a Purple Carrot Delivery (plant-based meal delivery service) and make the Korean Tacos with eggplant, but I added ground beef from a local farmer, Hancock Family Farms.  I love the Purple Carrot meals because they come with so many vegetables!  But I do find I prefer to add some meat or fish to each meal for extra protein.
Wednesday: Breakfast for dinner.  We had bacon from Hancock Family Farms, eggs, and roasted vegetables.
Thursday: Purple Carrot meal of Smashed Potatoes with jalapeno ‘cream’ and a snap pea and lentil salad.  I didn’t add any meat this time.

Friday: Mexican inspired Turkey Burgers with rice and salad.
Saturday: We went into DC for the Nationals Baseball game in the afternoon and after the game dined at All-Purpose Pizzeria.

Sunday: A few too many beers at the baseball game the previous night so it was a Five Guys burger and fries kinda night and Rita’s ice cream for dessert, 😉

Workout Recap

Monday: 30 minutes of sprints on the treadmill followed by 15 minutes of AB work
Tuesday: Taught a 1 hour BodyPump class
Wednesday: Taught a 45 minute total body strength training class
Thursday: Did 1 hour of yoga
Friday:  45 minutes of lower body exercises including barbell squats and deadlifts, step-ups on the bench, stability ball roll ins and some work with resistance bands
Saturday: Ran 2 miles then did 30 minutes of bicep, tricep, and back work
Sunday: Rest Day

I’m glad I got a stretch and a rest day in this week along with a good mix of cardio and strength training.  Stay tuned in the next few weeks I plan to post the workouts I’ve been teaching at class.

      It was good, I do love that they’re meals I wouldn’t normally make, but definitely miss having some meat with each meal.
