Last week was a little hectic as I had just got back from a trip to Arizona and we near the end of the school year at work.  Three more weeks to go before this teacher is off for the summer!  I plan to share a Scottsdale, AZ recap with you later this week so stay tuned!

Monday 5/14: Martha & Marley Spoons Hoisin Chicken Cutlets

Thursday 5/17: I flew into AZ for a bachelorette and we had Pizza from Grimaldi’s
Friday 5/18: Dinner out with the girls at Diego Pops in Old Town Scottsdale, we shared queso and the brussels sprout nachos as an appetizer and I ordered a chicken and steak taco for my meal.

Saturday 5/19: We hung out at our VRBO house by the pool the whole day and made Italian Chicken Kabobs, Orzo Salad, and had snacks.
Sunday 5/20: Tom grilled some chicken breasts using a rotisserie chicken spice mixture along with some Roasted Vegetables.

Monday 5/21: Baked Salmon with Roasted Vegetables
Tuesday 5/22: Turkey Tacos
Wednesday 5/23: Breakfast for dinner, I made avocado toast with bacon from Hancock Family Farms
Thursday 5/24: Banza Pasta mixed with some spinach, marinara sauce, and Aidell’s Garlic and Sun Dried Tomato chicken sausage
Friday 5/25: Dinner out at Galazio’s we split a calamari as an appetizer and I had the Alfano White Pizza

Saturday 5/26: Flew to Cleveland to look after my mom post surgery, my little sister was still in town and she made Bihari Kabobs with Homemade Naan and a Kale Salad

Sunday 5/27: Leftovers, I had chicken, rice, and steamed veggies and ice cream from Pine Cone Ice Cream for dessert.  One scoop of Buckeye Blitz and one Salted Caramel Truffle, yum!

Weekly Workout Recap:

Monday: 5 mile run outside
Tuesday: Taught a 1 hour BodyPump Class
Wednesday: Taught a 45 minute total body strength training class
Thursday: Travel, rest day
Friday: 4 mile hike, Tom’s Thumb in Scottsdale, AZ
Saturday: Rest
Sunday: Rest

Monday: 30 minute Insanity video
Tuesday: Taught a 1 hour BodyPump Class
Wednesday: Taught a 45 minute total body strength training class
Thursday: 30 minutes of sprints and incline on the treadmill
Friday: Rest, we had Field Day at school and I walked over 11 miles so not really a rest day
Saturday: 30 minutes of lower body and ab exercises
Sunday: Rest

    I’ve had road tripping to AZ on my list for awhile now… For some reason we always drive north, often to California wine country – though that’s not exactly a secret as to why! 😉 But I love that you and your girlfriends did a hike together. I love going on hikes with friends as active catch-up time!

      Oh you must do AZ sometime, there is so much to explore! And yes I wish I lived near more spots to hike because it’s a great workout and way to catch up with friends 🙂

    I love the way that you do these posts! They give me some great meal ideas and workout ideas! I’ve never been to AZ but I definitely want to go one day!
