Weekly Menu Recap:

At the beginning of the week I was in Cleveland visiting my parents and traveled back home to MD on Wednesday.  I finished reading Little Fires Everywhere and while looking for a new non-fiction bedtime read I discovered my local library has a few cookbooks I’ve been wanting to look at.  So on Wednesday I went to pick up The Pretty Dish, Half Baked Harvest, Thug Kitchen, and How Not to Die Cookbooks and plan to cook a few meals from each throughout the next few weeks.  I figured I can decided which books I actually want to purchase while I borrow them from the library.

This week was a pretty usual menu, I’m looking forward to trying some new meals over the summer.

Monday: Grass-fed burgers with a vinegar based potato salad I found in one of my mom’s cookbooks.  I’m a huge fan of using oil and vinegar rather than mayo in salads.  And since it was memorial day my mom and I made a Pecan Blueberry Galette served with some vanilla ice cream.

Tuesday: Grilled BBQ Chicken and veggies with a tossed green salad

Grilled BBQ Chicken and Vegetables
Wednesday: Baked Chicken and Roasted Vegetables
Thursday: Breakfast for dinner, bowl of sweet potatoes, brussels sprouts, bacon, and eggs
Friday: Leftovers alongside a Dr. Praegers Veggie Burger
Saturday: Pork Carnitas Tacos from The Pretty Dish Cookbook

Sunday: We had a late lunch at Cava while shopping so I ate one leftover Taco for dinner and had these Baked Churro Doughnuts for dessert.

Weekly Workout Recap:

Monday: 5 mile run outside
Tuesday: 45 minutes of a circuit total body strength training workout
Wednesday: This 10 to 1 Bodyweight travel workout
Thursday: Did a one hour BodyPump video
Friday: 45 minutes of yoga
Saturday: Taught a 1 hour BodyPump class followed by a 45 minute Tabata cardio workout class
Sunday: Rest

I did a nice job moving while traveling, I ran outside one day while at my parents house and did some weights and cardio workouts outside in the driveway.  Saturdays workout was a tough one as I taught both classes and was exhausted by the end.  But that’s not going to be too often as I was just subbing for the regular instructor.

    That galette is Gorgeous! And grilling out is my absolute favorite in summertime. We gotta do it more!

    I could sit in a library or bookstore and read cookbooks for hours! Some of them truly do read like novels.

      I totally agree! I love reading the beginning about the author and then about their cooking styles and ingredients they love.
