First of all, how are we already at the end of June?!? I want to cherish every moment of this Summer so did you catch my Summer Bucket List post? Yesterday was our first full day of break, so starting next week, meals will be a bit more interesting as I enjoy using my time off to try some new recipes.
Weekly Menu Recap:
Monday: Salmon with a dairy-free pesto from the How Not to Die Cookbook with Roasted Vegetables and forbidden rice
Tuesday: Spaghetti Squash Taco Bake
Wednesday: Crockpot Rotisserie Chicken (I have a recipe from my mom I need to share with you soon) and Roasted Vegetables and Sweet Potatoes
Friday: Grilled Chicken
Saturday: Carne Asada and all the Chips and Guac
Sunday: Burgers, Hot Dogs, and Sausages at a friends house and this Chocolate Pudding Pie for dessert
Weekly Workout Recap:
Monday: 30 minute Insanity Max 30 Workout
Tuesday: Taught a one hour BodyPump Class
Wednesday: Lower Body Workout of squats, deadlifts, lunges, step-ups, and glute work with bands
Thursday: Taught a 45 minute BodyPump Class
Friday: 30 minutes of Yoga
Saturday: Taught a one hour BodyPump Class and a 45 minute Tabata class of Bodyweight exercises
Sunday: Took a 1.25 mile walk with Tom
It was a busy week at the gym as I subbed several classes and my body needed the rest by Sunday. Over the summer I hope to attend a few new classes at the gym and continue with yoga and walking on active recover days.
