Our summer traveling has come to an end, unless I make one more trip home to see my parents in Cleveland cone August.  But we had our final road trip of the season to Ohio this past weekend to celebrate my friend Caitlin’s Wedding.  It was a great time in Columbus and an even more beautiful wedding.  I’m sad to see all my trips with my college girls come to end though.  But anyways here’s what went down in food and fitness last week.

Weekly Menu Recap

Monday: Salmon and Roasted Vegetables
Tuesday: Appetizers out before the Taylor Swift Concert (recap of the concert here)
Wednesday: Greek Yogurt marinated Chicken Kabobs with veggies and rice

Thursday: Burgers from Hancock Family Farms and Roasted Vegetables

Friday: BBQ from Smoked on High in Columbus
Saturday: Chicken, steak mashed potatoes, and green beans at the wedding venue, the Athletic Club of Columbus
Sunday: Steak, baked potato, corn, and asparagus while visiting at my parents house

So many delicious meals while traveling, but with no traveling plans this week I’m looking forward to cooking a bit more at home.

Weekly Workout Recap:

Monday: 2 mile run/walk followed by some lower body machines, leg extensions, leg press, then lunges, and abs.
Tuesday: Taught a one hour BodyPump Class
Wednesday: Taught a 30 minute total body weight training class
Thursday: Took a one hour yoga class at Live Out Loud
Friday: Rest
Saturday: Rest
Sunday: Took a short walk

Usually I don’t like taking three rest days in a row and try to workout while traveling a bit.  But rest is also always good for the body.  And on Monday I was ready to get back into it.

    Your roasted vegetables look so good! How do you roast them? I’ve been experimenting with different oils, different temperatures, and different oven times, but I feel like I haven’t hit the sweet spot yet and they never taste as good as they do at restaurants!

      Whoops, I definitely just scrolled up and realized that you linked to a blog post about roasting vegetables….lol. Sorry about that!

      In other news, I did celebrate National Ice Cream Day! I went to Coldstone and shared the Birthday Cake Remix with my boyfriend. I had totally forgotten that even existed (used to have it all the time in high school) and it was a delicious throwback.

        Haha no worries Rachel, definitely try some of the tips I talk about and let me know if it helps! I usually just use extra virgin olive oil, but not too much. And OMG I’ve been wanting to go to Coldstone for awhile now, it’s just an extra 20 minutes out of the way, lol. But yes used to always get that in high school, so good! Thanks for reading today 🙂
