I don’t mean to talk about the weather all the time on here, but dang we have gotten a LOT of rain. Which has put a bit of a damper on my cooking because I really love to grill outdoors in the Summer. And it’s also disrupted my afternoon walking and podcasting I’ve been doing during my Summer off, be sure to follow me on Instagram where I share some of my favs in my stories.
Weekly Menu Recap:
Monday: Blackened Salmon with roasted potatoes and a green salad
Tuesday: Enchilada Bake with Siete Almond Flour Tortillas
Wednesday: Bibimbap Bowls with beef bulgogi from the Half Baked Harvest Cookbook
Thursday: Breakfast Casserole
Friday: Pizza Night at a local restaurant that was closing down
Saturday: Tapas, mainly chips, salsa, and guac as we had a few parties this day
Sunday: BBQ from Spoons
And for dessert we had these Healthy Peanut Butter Cups which were SO good! I can’t wait to make more of them.
Weekly Workout Recap
Monday: 2 mile run/walk and some lower body exercises
Tuesday: Taught a one hour BodyPump Class
Wednesday: Taught a 30 minute total body weight training class
Thursday: Did this 30 minute yoga video
Friday: 2 mile run/walk followed by this Ab Routine
Sunday: Took a 1.5 mile walk
As always a mix of strength, cardio, and active recovery, just the way I like it! I’ve really been wanting to try a new workout class and start doing more yoga at home. Comment any of your recommendations below!
