Hello friends!  How is your week going so far?  Even though I’m off over the Summer it’s been pretty busy over here as Tom is a high school football coach and they just started their practices last week.  I’ve been keeping busy with getting things done around the house, teaching classes at the gym, and spending plenty of time in the kitchen.  Now lets get to all the delicious meals and workouts from last week.

Weekly Menu Recap:

Monday: Peri Peri Chicken (a Copycat of Nando’s)  spicy, but so good.  With cilantro lime rice and roasted veggies.

Tuesday:  Blackened Salmon with roasted potatoes and veggies
Wednesday: Moroccan Chicken with rice and green salad from the Half Baked Harvest Cookbook

Thursday: Ground Beef Bolognese with Red Lentil Pasta
Friday: Breakfast Casserole
Saturday: Chicken Gyros from the Half Baked Harvest Cookbook with asparagus.  I also made Fried Burrata as an appetizer from the Pretty Dish Cookbook
Sunday: Leftovers and this Chocolate Peanut Butter Caramel Mousse Pie for Dessert

And throughout the week as a healthier dessert we enjoyed these Paleo Chocolate Chip Cookies to satisfy our sweet tooth.

Weekly Workout Recap:

Three days of teaching definitely wore me out, I was so ready for yoga and some lighter exercise by the end of the week.

Monday: Taught a 45 minute Cardio Conditioning Class
Tuesday: Taught a one hour BodyPump Class
Wednesday: Taught a 30 minute Total Body Weight Training class
Thursday: Did this 30 minute yoga video and took a 2 mile walk
Friday: 2 mile run/walk followed by an AB Circuit
Saturday: Practiced BodyPump 106
Sunday: Took a 2 mile walk
