And just like that Summer is coming to an end. Are you a Summer goes on forever after Labor Day person? Or a bring on the Fall and Pumpkin Spice? I’m a mix of both. It’s still 90 degrees outside, but I get excited for Football and all the Fall foods!
Weekly Menu Recap
Monday: Quinoa Chicken Enchilada Bake
Tuesday: Shrimp and Broccoli
Wednesday: Burgers and Roasted Vegetables
Thursday: Chicken Apple Sausage, Brussels, and Sweet Potato Breakfast Bowls
Saturday: Chips n’ Salsa and Guac and homemade Empanadas
Sunday: Grass-Fed Steak, Roasted Potatoes, and Asparagus
And for dessert Sunday night we had some Peanut Butter Cookie Bars that I forgot to photograph but were delicious!
As a healthier dessert throughout the week I sampled these Apple Cinnamon Oatmeal Muffins that could totally be breakfast or dessert.
Weekly Workout Recap
I was subbing a few classes at the gym this week so I got in a lot more cardio than I usually do and not as much strength training. During the Cardio Conditioning classes I teach I use a Tabata time and we do 30 seconds of exercise, 10 seconds of rest. I do two exercises, four rounds through and a total of 6 Tabatas, phew that’s a lot of math. But with a warm up and cool-down it all ends up being 45 minutes and a great workout!
Monday: Taught a 45 minute Cardio Conditioning Class
Tuesday: Taught a one hour BodyPump Class
Wednesday: Taught a 30 minute Total Body Weight Training class
Thursday: Taught a 45 minute Cardio Conditioning Class
Friday: Did this yoga video
Saturday: Taught a 45 minute Cardio Conditioning Class
Sunday: Took a 2 mile walk
