Oh friends it has been so long.  Life with a newborn and returning to work means I have had very little down time.  And when I do have it, I find myself trying to catch up on chores around the house rather than taking time for things I enjoy like writing to you all.  But things are starting to get easier, our little Audrina sleeps through the night (and praying that lasts) and is becoming more independent during play time.  However, I’m going to save more baby girl updates for another post.

Today is all about food, since returning to work plus teaching group fitness classes two nights a week I have found it extremely hard to get a dinner together.  I really try to avoid picking up dinner during the work week, rather I like to save our dining out for the weekend. Plus it saves us money if we can cook at home, hello cost of day care now!  So I really wanted to share Six Favorite Quick and Easy Dinner Ideas for the Busy Work Week.  I shared a few of these last year with a post on my Favorite Healthy Recipes for Meal Planning and many of them continue to be on the weekly menu in our house.  Today’s meals all require little to no meal prep ahead of time because I just know not everyone has the time to spend in their kitchen on Sunday preparing for the week ahead.  So these Quick and Easy Dinner Ideas can be put together from start to finish in under 30 minutes.

Five Quick and Easy Dinner Ideas
1.) Sheet Pan Poblano Chicken Fajitas From Half Baked Harvest

I make these Sheet Pan Poblano Chicken Fajitas at least once a month and I’ve gotten my family hooked as well.  I like them with Siete Almond Flour or a Corn Tortilla but they would also be delicious just over rice or on a salad.

2.) Chicken Apple Sausage and Roasted Vegetable Breakfast Bowls

I am always a huge fan of Brinner (breakfast for dinner) so we often make my Brinner Bowl Recipe with Perfectly Roasted Vegetables, Chicken Apple Sausage, and add an egg on top.  I always keep plenty of eggs in the fridge for an easy protein and roast vegetables ahead of time for the week.

3.) Chicken and Broccoli from Gimme Some Oven

Lately I’ve also been loving Stir-Fry recipes, this Chicken and Broccoli comes together super quick on a busy weeknight.  I definitely prefer to make my own sauces and spice blends and they can be made rather quickly.

4.) One Pan Tacos

My Turkey Taco Sloppy Joe’s or Turkey Taco Bowls are always quick and easy for Taco Tuesday.  I often switch out the protein either using ground chicken, beef, or even tofu or tempeh for two meatless options.  Sometimes we have these with rice, in wraps, or with sweet potatoes, the sweet and spicy combo is so good!

5.) Banza Chickpea Pasta

When I know I’m teaching a workout class or have a meeting after school I almost always plan on having Banza Chickpea Pasta for dinner.  I usually pair it with Rao’s Tomato Sauce because it has no added sugar and some fresh arugula or spinach and a Chicken Sausage if I feel I need the extra protein.  I love Banza because it’s made with chickpeas and just feels easier to digest than regular pasta and packs some much needed protein during the work week.

6.) Miso Glazed Salmon

Salmon is such an easy protein to cook in the oven and it only needs a little flavor.  I love making this Miso Glazed Salmon Recipe in this Instagram Post.  I usually pair it with some of my Perfectly Roasted Vegetables, rice, or a salad.  Currently I can only find Miso Paste at the Organic Grocery Store by me, but it can also be bought online.  It is fermented soy and gives dishes SUCH good flavor, I’m obsessed.

    Ive been a big fan of the simple roast, potatoes, and vegetables in the crock pot! Quick, easy and by the time you get home from work you have a hearty warm meal waiting. Great post!
    Quick tip of my own! A tip I’ve always found useful is trying fasted cardio before you start your day or even eat breakfast. Basically, as soon as you wake up drink some water and you will go on some type of cardio equipment or outside if weather permits and do 20-25 minutes of LOW intensity cardio. When I say low if you were to do it with a partner you should be basically able to hold a conversation the entire time your doing the cardio. Do this 3-5 day a week before breakfast and you should notice the weight starting to fall off. As long as the cardio is accompanied by some other training and most importantly if nothing else, a good diet. Hope that helps some people revamp their weight loss!
